Mango Jello is an easy and delicious sweet jelly made with ripe mangoes and agar agar/ china grass. It is perfect for adding in falooda, mango milk, ice cream and other mango desserts and is a great way to use the mango in stock. You can easily make it in less than 5 minutes and it sets in less than two hours; it is time to say goodbye to the store bought jello. Ingredients

  • Mango purée- 1.5 cups (or) Mango- 2
  • Powdered Sugar- 3/4 cup 
  • Agar agar / Chinagrass – 2 tsp
  • Boiling water- 1 cup 

Directions

Preparation: Chop mango as shown and add the pieces to a blender and make a smooth puree. If you are using store bought mango pulp, skip this step.

1. Add the agar agar powder to water in a sauce pan and boil till it dissolves completely. Alternatively, to save time, add the agar/ China grass powder in a bowl and add boiling water and mix well to dissolve completely, or simply follow the package instruction.

2. Add powdered sugar and mix well without lumps.

3. Add mango pulp and stir to form a uniform mixture.

4. Pour the mixture into a square tray, cover with aluminium foil and refrigerate for 1 to 2 hours. You can also allow to set in room temperature.

5. Remove from the refrigerator and place in a tray of hot water for a minute for easy unmoulding. Gently invert on a plate to unmould, cut into squares and serve. Delicious Mango jelly is ready to serve!

Notes

  • Follow the instruction on the package of the agar agar or chinagrass powder. You can also use strips instead of powder.
  • You can add sugar to the mango while making the puree instead of adding it to the agar agar mixture for even mixing.
  • Always use sweet variety mango like alphonsa or banganapalli for the best taste.
  • You can also add few drops of lemon juice for tangy taste.
  • Adjust sugar according to taste.
